S’mores

Everyone loves s’mores. What could be better than a gooey marshmallow and melted chocolate candy between two delicious graham crackers. Luckily, you can enjoy the delicious taste of s’mores without the work or the mess. These s’mores cookies allow you to grab a bite of the tasty treat whenever you want. To make the cookies, you need:

¼ cup brown rice syrup
1 ½ cups gluten-free flour mix
½ cup chocolate chips
2/3 cup vegan marshmallows
1 tsp ground ginger
1 ½ tsp egg replacer
1 tsp cinnamon
½ tsp baking soda
½ tsp salt
2 tbsp maple syrup
1 tsp chocolate extract
2 tbsp coconut oil
1 ripe banana
2 tbsp molasses

It seems like a lot of ingredients, but these cookies are surprisingly easy to make. Preheat your oven to 350°F and line your baking sheet with parchment paper. In a bowl, combine all of your dry ingredients and set it aside. In another bowl, combine a mashed banana and coconut oil. Add both syrups, chocolate extract, and the maple syrup. Stir everything until completely mixed. In the middle of your dry ingredients, make well and pour your wet ingredients inside. Stir until combined, but don’t mix too thoroughly. Add your chocolate chips and marshmallows and mix together. When putting the cookies on the baking sheet, drop a large spoonful and then flatten each cookie with the bottom of a cup so it’s a thick disk. Bake for about 9 minutes so they’re soft, but set. Let them cool on a baking rack before serving.

Chocolate Chip Cookies

Chocolate chip cookies are common in households. They’re delicious and simple. If you don’t want to make your own, Hampton Creek makes amazing chocolate chip cookie dough. If you don’t mind making your own, this recipe is delicious. All you need is:

2 ½ cups all-purpose flour
10oz bag of vegan chocolate chips
2/3 cups packed brown sugar
2/3 granulated sugar
½ tsp salt
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
½ unsweetened almond milk
2/3 cup melted coconut oil

Preheat your oven to 350°F. In a large bowl, mix the white sugar, brown sugar, and coconut oil. Once combined, stir in the vanilla and almond milk. In a separate bowl, mix the flour, baking soda, and powder, and salt. Take the bowl of dry ingredients and slowly mix it into the bowl with the wet ingredients. Once it’s completely mixed, fold in the chocolate chips. Drop heaping spoonfuls of dough on your cookie sheet about two inches apart from each other. Bake for about 10 minutes or until the edges are golden brown.

Hot Chocolate Snickerdoodles

Hot chocolate snickerdoodles are a delicious, Mexican recipe that makes snickerdoodles with hot chocolate and cayenne pepper. These cookies are sweet, moist, and have a punch that most cookies don’t have. To make these, you need:

1 2/3 cup all-purpose flour
1 cup granulated sugar
1 tsp baking soda
¼ tsp salt
½ cup cocoa powder
½ tsp cayenne pepper
½ cup canola oil
1/3 cup pure maple syrup
3 tbsp almond milk
2 tsp vanilla
½ tsp cinnamon

The cookies will be coated with a sugar dusting of 1/3 cup of granulated sugar and 1 teaspoon of cinnamon. To make the cookies, sift the flour, and mix in the cocoa powder, cinnamon, cayenne, salt, and baking soda. In another bowl, whisk together canola oil, vanilla, milk, maple syrup, and sugar. Once it’s all mixed together, slowly add the wet ingredients into the bowl with the dry ingredients. Once everything is thoroughly mixed, the dough will be thick and stuff. Roll heaping spoonfuls of dough into a ball. In a small bowl, mix together the sugar and cinnamon for the cookie coatings. Roll the dough ball into the bowl so it’s coated and then place it on the cookie sheet. Place the balls about two inches apart and bake for 10-12 minutes. Let the cookies cool on a wire rack and then serve.
