Whole Grain Bagels | Gluten-Free on a Shoestring

CookieCookie is gluten intolerant.  We had at least a visual confirmation of this when we eliminated gluten containing products from her diet.  The eczematous patches on her arms and legs cleared up and she stopped having random breakouts of hives.  She loves bread and bagels especially.  Looks like I’m going to be joining the bandwagon of gluten free foodies.  Thanks to Nicole from Gluten Free on a Shoestring I now have a recipe for whole grain gluten free bagels that look pretty tasty.  Whole Grain Bagels | Gluten-Free on a Shoestring.

Having to watch Cookie go without in terms of bread and pastry is sad but it’s much worse to see her little arms and legs get covered in puffy, scaly, itchy, painful sores that first ooze then dry out and cause her skin to split and even bleed at times.  We thought at first it was psoriasis, but after her skin reacted adversely to being out in the sun when she was broken out instead of getting better we had to scratch that idea.  The most help we ever got from doctors was ‘put some hydrocortisone on it’.  I knew there had to be an underlying reason for her breakouts, but I didn’t really know who to turn to.  A close friend mentioned that they discovered that the scaliness and extreme dryness on his hands was from a gluten intolerance after taking him to see an iridologist.   She took us to see the woman and she confirmed our suspicion.  Within just a week of taking all wheat and gluten out of her diet Cookies arms were clear of lesions.
