Chili seasoning packets are a staple in my house because it is an easy quick meal that incorporates vegetables and we usually always have the basic ingredients to make it. To my utter disappointment I discovered that our favorite brand of chili seasoning included wheat. This is a problem because DD1 is gluten intolerant. She has been gluten free (or at least trying to be) for the last six months. Her bouts of painful eczema and cracked skin on the insides of her elbows and knees have all but gone away. She still has small flares, but we did discover that the consumption of gluten in any amount can result in flares of symptoms up to six months later. Unfortunately, I believe we will be seeing little flares for the next six months since I keep discovering things in the house (like chili seasoning) that I know she has eaten that have gluten and I had no idea they did.
After I gave away all my spice packets of chili seasoning, onion soup mix and pho seasoning I was not hopeful we would be able to find any that were gluten free. To my utter surprise and delight I was able to find two brands of chili seasoning that did not have gluten. One was Brooks and the other, my favorite, Carroll Shelby’s Original Texas Brand Chili Kit. The Brooks was good, very heavy on the chili powder without much depth of flavor. The Carroll Shelby’s chili seasoning was spectacular.
The Carroll Shelby’s Chili Kit was clearly marked gluten free. Unlike other chili seasoning packets this kit came with four separate packets: spices, cayenne pepper, salt, masa flour. This was special and very nice because the kit allowed you to moderate the spiciness and sodium in your finished product. One note though, you need 2 pounds of ground beef to use the whole chili seasoning kit unless of course you are inclined to divide and save half; I did it once but it was a bit of a hassle. All three times I made chili with Carroll Shelby’s Chili Kit my family raved about how good it was.
